I have more than 75 of these cars and I've collected ones that are known to be fast or that fit the profile of the faster ones. My top performers are listed below. I would though love to get any feedback on other fast Pixar cars.
Note that given the larger size, many of these cars won't fit on a standard orange track. In the table below, I list which of my fastest ones fit on the orange track.

My next group of fastest Pixar/Cars. Finn McMissle (not shown here) is 6th, followed by the gold Tex Dinoco, Bob Cutlass, Donna Pits, Sterling with Headset and the large Keith Kone. Tex Dinoco is a 4-Star car and the rest 3-Star cars. Note that Bob Cutlass and Keith Kone do not fit on a standard orange track.

Top 20 Pixar Cars
The Andrew Vrooman is the fastest Pixar/Cars so far, my first 5-Star entry for this series of cars. Richard Clayton Kensington was nearly a 5-Star car. So there is some speed to be found here. I'm always on the lookout for potential faster models.
